Shortcut Strawberry Poke Cake
So, sometimes I am lazy. I like to take shortcuts, anything that will make my day to day life a bit easier. If I had all of the time in the world with no other responsibilities, I would prepare everything from scratch. If I had a ton of money, I would buy the finest ingredients and try out recipes with names that I can’t pronounce. Actually, no..I probably wouldn’t do either of those things. 🙂 I would still use shortcuts, and the food would still be delicious. For an end of summer treat, I made a Shortcut Strawberry Poke Cake.
I saw a similar recipe that began with a “made from scratch” vanilla cake in a rectangular baking pan. As I walked into Dillons (local supermarket) to purchase the needed ingredients, I noticed a huge display of bakery fresh bundt cakes for a price much cheaper than the ingredients would have cost me. Easy decision..I purchased a vanilla bundt cake and planned to adjust the rest of the recipe accordingly.
Once home, I sat the cake on the counter and informed my husband that I would be using that cake to make a fancy dessert . Fast forward several hours…
Not again!
I washed and cut up my fresh strawberries, prepared the strawberry puree in the blender, and went to grab the cake. It looked like this..
Yes, my husband cut and ate a slice before I could do anything with the cake at all! WHY?? I specifically told him that I had plans for it, because I know how long anything lasts in this house. It took everything in me to hold myself back from throwing another tantrum as I did with the ice cream fiasco a few weeks ago. I must have somehow made him feel guilty, though, because he ran to the store and bought another cake (so much for saving money).
After I made the recipe (which is fantastic, by the way), I cut a slice and took a picture for the recipe post. My husband did point out to me that I chose to take a picture of the cake with a missing piece anyway, and we could have just used the other cake. Ooops! The cake was great, but I will say that I think the whole “poke cake” process works much better in a rectangular pan instead of a bundt cake. I’ll remember this for future reference. Enjoy.
