Keto Buffalo Chicken Strips

These strips bake to crispy perfection in the oven, and the addition of Frank's Red Hot sauce gives them a great extra kick!

Ingredients

  • 1 Bag Frozen chicken tenderloins Thawed
  • 2 Eggs
  • 1 Cup Pork rinds Crushed
  • 2 Tablespoons Heavy cream
  • 1 Cup Parmesan cheese Shredded
  • Salt
  • Pepper
  • Frank's Red Hot Sauce

Instructions

  1. Preheat oven to 350°.

    2. Whisk eggs and heavy cream together.

    3. Mix together crushed pork rinds, Parmesan cheese, salt, and pepper in bowl. 

    4. Dip tenderloin in egg mixture, followed by dry mixture until well coated. 

    5. Place on greased baking pan and bake for 25 minutes. 

    6. If desired, sprinkle preferred amount of hot sauce over the top of strips and return to oven for another 5 minutes. 



Recipe Notes

These are very good dipped in ranch dressing (prepare your own, or Hidden Valley ranch is only two carbs per 2 tablespoons).  Enjoy!
