Low Carb Chocolate Mug Cake
A quick and easy way to get your chocolate fix on a low carb diet! If my calculations are correct, each cake is about 5 carbs.
Ingredients
- 2 Tablespoons Butter
- 1 Large Egg
- 2 Tablespoons Unsweetened cocoa powder
- 2 Tablespoons Almond flour
- 1.5 Tablespoons Erythritol
- 2 Teaspoons Coconut flour
- 1/4 Teaspoon Vanilla
- 1/2 Teaspoon Baking powder
Instructions
-
Put butter in mug and microwave for 20 seconds or until melted.
2. Add erythritol to melted butter.
3. Add cocoa powder, coconut flour, almond flour, baking powder, and vanilla.
4. Add the egg and mix together well with a spoon.
5. Microwave for 60 seconds.
Recipe Notes
This tastes even better if you add a little bit of whipped cream to the finished product. You can make your own by mixing (with a mixer) heavy cream and a small amount of liquid stevia,Erythritol, or your choice of sweetener to taste.  If you don't mind cheating a bit, Cool Whip or Reddi Whip only has 2 carbs per 2 tablespoons. 😉 Yum!
