Arlena Stepp “stepped up” once again and supplied us with our featured recipe of the week! Arlena replaced bread crumbs with crushed pork rinds to make this a fantastic low carb option. 

Low Carb Mozzarella Stuffed Meatballs

These mozzarella stuffed meatballs are a great low carb dinner option, as the traditional bread crumbs have been substituted with crushed pork rinds. Less carbs without sacrificing flavor!

Total Time 25 minutes

Ingredients

  • 1.5 Lbs Ground beef
  • 1/3 Cup Pork rinds Crushed
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Black pepper
  • 1/2 Teaspoon Garlic powder
  • 1/2 Teaspoon Dried oregano
  • 1 Egg
  • 2 Tablespoons Water
  • 6 Oz Mozzarella cheese Cubed
  • 3 Cups Marinara sauce Warmed

Instructions

  1. Preheat broiler. Line a sheet pan with foil coated with non-stick cooking spray.

    Mix together beef, pork rinds, and other dry ingredients. Add egg an water. Mix well.

    Roll approximately 2 tablespoons of meat mixture into a ball. Press a cube of cheese inside the meatball, making sure cheese is completely surrounded. Repeat with remaining meat and cheese.

    Broil for 10-15 minutes or until meatballs are fully cooked. 

    Place meatballs on plate and pour marinara sauce over the top. Sprinkle with shredded mozzarella and parsley if desired. 

Recipe Notes

Use marinara sparingly to lower carb count. Enjoy!

Luke and I did pretty well eating low carb this week, but my husband decided he did not want to join us (which makes it harder).     Without detailing every meal, I will tell you that we ate no-bun cheeseburgers, grilled chicken salads, chicken/brocolli

At around age eight, I suffered from chronic tonsilitis.  One day, I choked on something because my tonsils were so freakin’ enlarged- and it scared me so much that I vowed to never eat again. Stubborn little thing that I was, I kept that vow for months. I quit eating. I sustained on liquids and an occasional milkshake, until a piece of styrofoam from my cup broke off in my shake and I was convinced I could no longer drink shakes (for fear of choking on styrofoam).  I withered away until my grandma Hazel broke down in tears and told my parents that something needed to be done.  Something was done.
