“Almost Homemade” Chicken and Noodles

My husband was a single daddy with three young children when we first met . He invited me over to dinner one evening, and had prepared chicken and noodles.

I was surprised that he had actually made his own noodles using eggs, flour, and milk.. rolled them out, cut into strips, and dried them.

The rest of his recipe, however, was far different from the chicken and noodles my mother used to make. He used Campbell’s condensed cream of chicken soup.  I was skeptical, but impressed with  the effort.. so I tried them.

It was fantastic! That was almost twenty years ago, and to this day I still make his recipe more often than I do my mother’s old fashioned chicken and noodles.

I do not make my own noodles, though. I use good old Reames frozen egg noodles, along with other shortcuts. Still tastes delicious and hearty. Of course, for me they have to be served over mashed potatoes (I think this might be a Kansas thing)!

“Almost Homemade” Chicken and Noodles

Shortcut version of a hearty fall favorite. All of the deliciousness with half of the work!

Ingredients

  • 1 3lb bag Frozen, boneless chicken thighs or breasts
  • 1 Family size can Campbell’s Cream of Chicken Soup
  • 1 Large bag Reame’s Frozen egg noodles
  • Water
  • Salt & pepper To taste

Instructions

  1. Place frozen chicken in crock pot.

    2. Add 5-6 cups water.

     3. Cook on high for 3-4 hours or low 6-7 hours(or until chicken is cooked to “fall apart” consistency). 

    4.Add water as needed to keep level up, depending on how soupy or thick you prefer your noodles. 

    5. Shred chicken in crockpot and add bag of frozen noodles..cook these on high for another 20 minutes or until noodles are done.

    6. Add can of soup, salt, and pepper.  Cook another 30 minutes or so.

Recipe Notes

As you can see.. there are really no specifics to this recipe. Some like to use more water or chicken broth for a soupier dish, some use less for thicker chicken and noodles. 

Chicken thighs are more flavorful, but chicken breasts work fine as well.

I enjoy mine served over mashed potatoes.
