Grandma Hazel’s “Carmel Corn”

This is the BEST caramel popcorn you will ever have, and I’m not exaggerating!  My grandma made this every year and brought a tin full of the popcorn for each family to take home.  I love caramel corn, but truly none of it tastes quite as good as this does.  She made this for us until she was over a hundred years old, and then she gave me a handwritten copy of the recipe to continue the tradition.  I was standing in the kitchen making my third batch of the afternoon today, and my back was killing me…which just made me further appreciate the fact that she continued doing this for so long.  As I get older, I no longer take for granted the things that my parents and grandparents did for us.  This recipe is really very simple, and I guarantee your family will love it (the guarantee..if they don’t, give it to me and I’ll eat it )!!:)

Grandma Hazel's "Carmel Corn"

This is the BEST caramel popcorn you will ever have!

Prep Time 20 minutes
Cook Time 1 hour
Total Time 1 hour 20 minutes

Ingredients

  • 5 cups popcorn popped
  • 1 stick butter
  • 1 cup brown sugar
  • 1/4 cup light corn syrup
  • 1/2 tsp vanilla
  • 1/2 tsp baking soda

Instructions

  1. Spread popcorn on nonstick baking pan or rimmed cookie sheet. 

    2. Place butter, brown sugar, and corn syrup in saucepan.

    3. Bring to a boil, stirring constantly.  

    4. Remove from heat and quickly stir in soda and vanilla.

    5. Pour over popcorn. 

    6. Bake in a 250 degree oven for 45-60 minutes,  stirring every 15 minutes.
